Monday Mealtimes: Chickpea Burgers!

  • These chickpea burgers are so yummy and quick to make! Plus they are healthy, low-fat, high-protein and dairy and refined sugar free. Who said eating healthy wasn’t easy and full of flavour?! Well they’re wrong as these burgers are both delicious and are made in under thirty minutes

These can be made as part of your meal-prep at the weekend or whenever you do your meal prep. I tend to mine on a Sunday evening before work or they can be made anytime you feel like making them. Additionally, these recipe should make eight burgers so if you wrap them in BPA free plastic wrap they freeze easily and can be re-heated in the oven or over a hot pan if defrosted. Simple and perfect!

For the chickpea burgers you will need:

  • Two cans of chickpeas that have been well-drained and mashed into a pulp.
  • 1/2 white onion, finely chopped.
  • 1/2 red onion, finely chopped.
  • 1 tsp basil.
  • 1 tsp cumin.
  • 2 tsp of crushed garlic or finely chopped garlic cloves.
  • 2 tbsp of peanut butter.
  • 2 tbsp of black pepper.
  • 1/2 tsp of salt.
  • 1 cup of oats.
  • 2 tbsp of olive, coconut or rapeseed oil.

For the side salad you will need:

  • One grated carrot.
  • 100g shredded lettuce.
  • Half a grated cucumber.
  • 2 tsp of white wine vinegar.
  • 1 cup of olive or rapeseed oil.
  • 1 tsp of chilli.

Extras:

  • Thinly sliced tomatoes for the burger baps.
  • Whole-meal or wholegrain burger baps.
  • One or two lettuce leaves.
  • Gherkins (optional).

How to make the burgers:

Place the mashed chickpeas in a large enough bowl to add the rest of the ingredients.

Add all the other ingredients for the burgers to the bowl. Seriously that’s it…how simple is that?! Use your clean hands to mix all the ingredients well. Rinse your hands after doing this.Form the mixture into burger patties.Leave them to rest in the fridge for ten minutes so that they harden up.Heat a large frying pan with olive, coconut or rapeseed oil.

Cook the burgers for about three to five minutes each side dependent on the size of your burgers.Whilst the burgers are cooking and in a separate bowl add all the ingredients together for your salad.

Toast the burger baps under a low grill. Say about 150 degrees or gas mark one or two.Arrange your salad on your plate. As in this case my lovely blue and white spode china plates!

Add sliced tomato, lettuce and gherkin to your burgers and serve with the salad. Wine is optional. Well wine is never optional as it taste’s so yummy!
